Default Point mesh to Geometry

Hi, and apologies if this is posted in the wrong place and/or a stupid question. I'm still new to CAD/CAM and 3D modeling.

I have some 3D scans stored as points and also converted to STL files. I need to convert this data into a geometric file format. So I can edit it and then have it machined/printed. Could someone please recommend what they think is the best way to do this.

As I will have to do this reasonably regularly I am ideally looking for the least labor intensive process (aren't we all). So I guess what I am really after is a software package/tool/converter that can do a best guess conversion and ask me about the bits it is confused about. I have done quite a bit of searching and turned up nothing. At the moment it would appear to be easier just to model everything from scratch and forget about the 3D scanning. I'm sure this can't be the case and I must just be looking in the wrong places.

Any help very much appreciated, as I'm starting to go round in circles.
